Bacon “Steak” Is Reason Enough to Give Sydney’s a Try

The half-inch-thick Nueske’s on sliders is a hole-in-one at Tiburón’s under-the-radar pub that’s open to the public.

Even if your idea of hitting the links involves a putter, windmills and fairways less than 20 feet long, it doesn’t exclude you from trying the little-known Sydney’s Pub at Tiburón Golf Club. Open to the public, with free valet seven days a week, the comfy eatery overlooking the green is executive chef Brent Moore’s playground. His menu caters to a lunching and snacking crowd (the pub opens daily at 11 a.m., and it closes at 8 p.m. weeknights and at 5 p.m. on weekends). There is a lot of variety, with flatbreads, salads, soups and sandwiches, as well as dishes like lemon-garlic grilled wings, fried pickles with chipotle-lime dip, traditional chicken pot pie, grouper and chips—and the most amazing sliders with Nueske’s bacon as thick as a deck of cards. Those beauties have made an appearance for the past three years at the Southwest Florida Wine & Food Fest’s Grand Tasting and are consistently the talk of the crowd (where else have you seen such a thing?). Deliriously laced with fat and sporting a crisped exterior from the grill, the bacon “steaks” are then popped on buns with shredded lettuce and mayonnaise that Moore makes using tomatoes that have been roasted for 12 hours.
