Skip Quillen to Open The Saloon in December

The Naples-based restaurateur behind Chops and Pazzo is redoing the former Blue Water Bistro space at Coconut Point this fall.

Details have finally been released regarding restaurateur Skip Quillen’s next move in his old Blue Water Bistro space in Coconut Point.

Fans of barbecue and wood-fire-grilled meats, get ready to say howdy to The Saloon.  

Scheduled to launch in late November or early December, it will channel a Western watering hole of yesteryear, complete with suede leather banquettes and Victorian-style crystal chandeliers—plus, Quillen has procured a 100-year-old wood bar to help set the mood.

He envisions this to be the rowdy, dressed-down sister to some of his more polished eateries on Fifth Avenue South. In a statement, he said, “This by far will be our most affordable, fun concept. With well cocktails starting at $3.95 and entrees from $6 to $20, we wanted to show that value and quality can go hand in hand.”
