In this colorful dish, fresh dolphin (mahi-mahi) is lightly sautéed
and accompanied by a delicate chardonnay beurre blanc, button mushrooms and
garnished with green onion sprigs and a lemon wedge. Diagonally sliced yellow
and orange carrots are tossed with crisp green beans and rings of red pepper,
offering bright contrast and varied textures. A pyramid of steaming wild and
white rice and parsley completes Islamorada Fish Company’s Dolphin
Chardonnay.
