Best Bite: Whole Fish Crudo at Sails Restaurant

Like the chic European seaside towns it takes inspiration from, Sails Restaurant has coasted into its Fifth Avenue South berth with panache. By hiring chef Jacob Jasinski, who last led an in-hotel restaurant that earned the establishment a spot on Condé Nast Traveler’s Gold List and five stars from Forbes, Sails is luring Naples’ sophisticated diners with fish from around the world prepared in novel ways. One such dish that hooked our attention is the whole fish crudo prepared with the day’s freshest catch that Jasinski accents with whatever citrus is bright and at its peak. This means a loup de mer (pictured here) could get dressed with segments of ruby red cara caras and paper-thin fans of pineapple—and be offset by cooling cucumber and melon shavings with radish disks and a dusting of espelette for bite.
