Best Bite: Hot Lobster Roll at Artisan Eatery

As a testament to the changing nature of the way we eat, it’s only natural that one of the freshest, most disarmingly good cafés to take root in Southwest Florida last season is pushing boundaries. Curated details such as black and white farm animal illustrations and a wood-framed specials board touting locally raised meats may seem at odds with counter service and a DIY soda and beer cooler, but expectations remain high after learning of owner Tim Yoa’s pedigree. A classically trained executive chef, Yoa developed a knack for melding ingredients like bourbon-soaked blueberries and seared foie gras in culinary school and haute Naples restaurants. His standard breakfast, lunch and dinner menus can be deceptive, with humble offerings like a lobster roll, but his execution is what is extraordinary: When he tosses hot, buttery, herbed knuckles onto a croissant, it’ll leave you tickled pink.
