Best Bit: IM Tapas' Paella Marinera (Lobster Tail)


Executive Chef Isabel Polo’s generous paella is brimming with seafood—a whole cold-water lobster tail, four large diver scallops, plump Mediterranean mussels, Atlantic clams, large shrimp and fresh cod. Polo starts with organic Spanish calasparra rice enriched with saffron and then builds layers of flavor with fish stock, fire-roasted peppers, poblano pepper, Spanish chorizo and a splash of sparking cava wine.
