\n\n Executive Chef Greg Scarlatos has designed a four-c ourse menu to showcase the authentic flavors of America&rsquo\;s Southwest : ancho-smoked scallops with mango-bacon emulsion\, spiced avocado flan an d sweet garlic oil\, paired with Avió\;n Blanco\; blackened pork bel ly with crispy boniatos\, tossed citrus and herbs and sapote coulis\, pair ed with Avió\;n Reposado\; roasted duck and mushroom duet with grill ed asparagus and vanilla-peppercorn reduction\, paired with Avió\;n Añ\;ejo\; and finished with Southwestern cannolis\, paired with Scor pion Mezcal 5 Ano.
\n\n Tequila Avió\;n&rsquo\;s proprietary U ltra Slow Filtration process filters the beverage into the smoothest Silve r\, Reposado and Añ\;ejo varietals in the world.
