Authentic French at its best, plus a pleasing pie crust

Cassoulet at Le Lafayette

While we’ve hardly ever needed an excuse to drop by Le Lafayette for the authentic cuisine from its French chef-owner, Sebastian Maillaird, we can’t resist popping in most Saturdays now for a dose of his cassoulet. He prepares the dish—a fragrant stew of pork sausage, duck confit and white beans in a pool of zesty tomato sauce—as a take-home item for the seasonal market he started in December on the restaurant’s porch (a complement to the nearby Third Street fair). This month we’re also looking forward to seeing Maillaird’s tricks of the trade, as he will lead a cooking demonstration May 8 for the ArtsNaples World Festival honoring his homeland. We’ll be able to eat our cassoulet and learn to make it, too.
