Hot Dish: Cavo Sparkles (Finally!)

Two years, months of heavy-duty construction work and countless guessing games later (Seminole Casino would make a killing if people placed bets on Collier County restaurant and bar openings) … and Cavo is unveiling itself with a soft opening to the public Monday, Aug.31, at 4 p.m. The lounge is a partnership between Rocky Patel of the existing Burn right across the Mercato alleyway and two members of the New York-based S Hospitality Group. Chef Joel Reiss from the group’s S Prime steakhouse in Long Island City is the mastermind behind the menu (by the way, Queens was recently named the top tourist destination in the United States by Lonely Planet, so you could say by extension we’re riding that trend). Although we have high expectations for Reiss’ primarily small-plate selections, there are higher stakes for the drinks. The corner space boasts a four-sided indoor-outdoor bar with ample seats and two specialty cocktail lists, one with plenty of effervescence (from prosecco, champagne and bubbly mix-ins) and another with drinks that shine without the extra sparkle. So the next time you’re jonesing for a night out in North Naples, we’ll place our money on Cavo and its Po Pazzo doing the trick.
