Angelina’s Ristorante will host its Annual Truffle Wine Dinner twice this year to provide for ample seating and spacing – on Wednesday, Dec. 9 from 6:30 to 9:30 p.m. and on Thursday, Dec. 10, from 6:30 to 9:30 p.m. The tastings will take place at the restaurant located at 24041 S. Tamiami Trail, Bonita Springs, FL.

Savory flavors will be presented in a decadent five-course meal prepared by Executive Chef Ryan Fredstrom. Each course, except dessert, will feature either White Alba Truffles or Black Winter Truffles sourced directly from Piemonte, Italy. The tasting is expertly designed to pair these rare, seasonal delicacies with wines from Angelina’s 30-foot wine tower chosen by Dinah Leach, Wine Director and Sommelier.

The first course will feature pumpkin and foie gras fiocchetti with sage brown butter, chestnuts, and black truffles paired with a 3028 Vietti Roero Arneis DOCG. Boasting rich and delicious tastes, the second course will include polenta with Fontina cheese, a soft-boiled organic egg, truffled pecorino, and White Alba Truffles served with toasted ciabatta with truffle salt and truffle butter and coupled with a 2017 Pico Maccario “Tre Roveri” Barbera d’Asti DOCG Superiore.

Featuring a 2017 Giuseppe Cortese Barbaresco DOCG, the third course will consist of duck confit with herbal notes and wild mushroom risotto finished with dried cherry agrodolce drizzle and White Alba Truffles. Robust and savory flavors will shine in the fourth course, which offers a grilled Colorado rack of lamb with rosemary butter, truffled mashed potatoes, demi-glace, and White Alba truffles paired with a 2013 Boroli Barolo DOCG.

The fifth course will feature a scrumptious dessert of zabaglione with strawberry, watermelon, and Luxardo cherries served with a Pico Maccario Piemonte DOC Rosato Brut.
