If one of the nation’s most in-demand pastry chefs somehow finds time to host nighttime classes at his Fort Myers chocolate salon, you need to get on the phone and book your seat.
A few of the classes have already sold out, but we’re in luck because summer is our box of chocolates with 20 sessions to choose from until late September. The topics vary by the week (with some repeats) and include cupcakes; his signature molded candies; and a new one this year on impressive-yet-easy desserts to make at home, like a liquid-center chocolate cake.

They’re $95 for three-plus hours of instruction, a recipe booklet and your handcrafted sweets to bring home. They also usually begin with a warm introduction by Norman Love himself and continue with his fellow chocolate masters coaching your every move in attempting, in my case last year, layer cakes. I was impressed to see him and even more so to hear that he tries to make it to each session (especially now that he’s opening his fourth area chocolate salon, in Fort Myers).
All of the workshops are held at the mothership, his headquarters a short drive north of RSW and next door to JetBlue Park. And with Mother’s Day and Father’s Day around the corner, what better way to show your love than with a sweet hands-on experience they’ll never forget?
